Mashed Potatoes

From my childhood days I’ve always loved mashed potatoes. I mean the smooth puree of potatoes, perhaps with cream and butter – not the lumpy kind with little lumps of potato not mashed; and worse still, not even properly cooked. But I must confess that I’m a bit lazy and I’ve always preferred it when someone else does the work of mashing the potatoes and extra washing up afterwards. In recent years I’d estimate that I’ve only made mashed potatoes once or twice a year. It hasn’t been something that crosses my mind to do. It’s much easier just to served up the cooked potatoes, which I like anyway. And it’s easier to cook rice or pasta than making mashed potatoes. And it’s even easier to serve up oven fry potato chips or wedges.

The main way I’ve made mashed potatoes is to tip the cooked potatoes into an old bowl given to me in the mid-1960′s and mash the potatoes by hand with an old fork (with long splines) given to me at the same time by my Mother when setting me up a bit for the first time I moved into a flat (in Adelaide).  That has been my old faithful way of mashing potatoes.

However, over the years, I have tried out other ways of mashing the cooked potatoes.   One method was to use a Sunbeam Mixmaster, but that seemed like huge overkill to use such large and relatively  heavy equipment when cooking for one.  I also tried using a food mill (some call it a mouli) to try to puree the potatoes, but I never took to this method with the food mill I had. Or to be more accurate, my potatoes never took to it. They refused to go where they had to, that is, under the mashing blade. To be honest, I can’t blame them. If I were cooked potato I wouldn’t choose to be crushed into a mash.

I’ve also tried a potato ricer. Without doubt, the results from my ricer are THE best I’ve ever had. I treat the results with the same respect as one has for whipped egg whites. Extras are folded in gently, to preserve the lightness of the mash.  The downside to my ricer, and the reason I don’t use it often (in fact, not for years), is that it’s a bit small for potatoes, and too much of the potato pieces don’t get processed – but stay in the ricer in out of the way places.  I have since read that this is because the cheaper construction of my ricer allows potato to squeeze back past the plunger.

But this week, I saw an advert on TV for the Kenwood triblade, and it awakened my interest in mashed potatoes.  So I did some YouTube research on making mashed potatoes.

I found this video very interesting, especially the hint to overcook the potatoes for a few minutes if you intend to mash them.  That made good sense.  But my jaw dropped when the demonstrator added milk to the mash.  I couldn’t credit how much milk she added.  Well, she did say it looked like soup.  I wouldn’t go into that in a fit.

This is the demo of the Kuhn Rikon potato ricer.  From what I can see, it’s much bigger than my ricer, and would fit all the potato I would cook for myself, in the ricer at once.   In the video, it works wonderfully.  I’ve read several user reviews and one explicitly mentions that it does suffer from the problem that my ricer does.   In the past I couldn’t find a seller in Australia, but in a check tonight I’ve found several interstate online stores that sell it.  I’ll definitely try to get one, hopefully before Christmas, and will report on it in due course.

New Theme concept trial

Today I’ve begun developing a new blog site theme layout using the recently released RichWP Framework for creating customized themes in WordPress. I’ve only been working on the for two hours, so there is lots to do and lots to learn. The big difference with this theme is that is a classic blog design with a each posts going down the page in chronological order. My previous theme had a magazine style layout – it can be seen on the home page of my main web site (which can be found here).

The advantage of this type of theme layout for me is that it’s easier to publish new posts, as the post don’t need two photos (as required by the previous theme to maintain its magazine format. In fact it doesn’t need any photos.

Eyewitness: Almaden bush races

The traditional Australian bush race meeting is almost a thing of the past, but Almaden, a north Queensland town with a population of just 30, has bucked the trend. Amateur jockeys race on stock horses in sprint races, with bettors ‘buying’ the horse for the race at auction.

By the way, my new Lexus is going well, and I’m very pleased with the decision to make the changeover.

Themes

On Friday afternoon I decided to look for a new free WordPress theme to try out just for a change from my usual Thesis theme. Now and again I like to do this to show visitors that the way the page looks is not set in concrete. It’s how I like it. On Friday, I looked at dozens of themes, and even tried about eight of them, and the one I liked was the Aesthete Theme. So I published it. Ralph apparently liked it and made a comment (using my last post to do it). I’ve now gone back to the Thesis theme, which makes Ralph’s comment look a bit strange.  So I’ll show you a screen grab of what the page looked like that he commented on:

It looked much better full size because of the header photo and the delicate scrolls that like a squiggle in the above photo.

I’m still trying to think up a new Blog Title and Tagline for this page. I’ve tried The Silver Fox speaks up, and currently it’s The Chain Saw Man speaks up – but I want a name that doesn’t bring millions of Google results.

The Silver Fox currently brings 22,100,000 results and The Chain Saw Man brings 94,100,000 results.

I’ve thought of “John’s Journal” but that brings 23,700 results.  Another one I’ve looked up is “JT’s Journal” – 4,900 results and one the top results is for guess who?  Justin Timberlake.

Back in the late 1960′s to mid 1970′s when I used to do real 35mm slideshows with music, they used to start with “John T Hill Himself Presents” .  Now that gets 0 (zero) results when searched for in quotes.  But I think it sounds pompous, and I want a Blog Title that doesn’t sound pompous.  In fact, I’m look for a name that reflects on the blog page itself, and not on me.

I’ve asked readers before if they can think of a title, but I’ve had no suggestions, which is perhaps a good thing, as some people might get upset if I don’t adopt their suggestion and they’ll forever think that what I do eventually adopt is not as good as what they suggested.

I am, of course, talking utter nonsense. After writing the above, I’ve just done a Google search for “The Chain Saw Man speaks up” in quotes, and it brings only 4 results – and they all relate to this blog page.

But how often do people do Google searches in quotes?

More changes

I‘ve made more changes including the title of this blog.  I had a friend at Elders IXL – Foster’s (Andrew W) who always called me the Silver Fox, so that’s where that came from.  Apart the new name for my title, and the new subtitle, the most obvious change is the design of the new header.  It’s not permanent, and it’s just part of my process (in the current jargon of an AFL footy team selecting a new coach) to learn how to do things in WordPress and the Thesis theme.

Furthermore, I expect that the new title and subtitle will only be temporary until I decide on something that I happy to settle.

Your opinion please?

I’ll welcome your comment on whether you prefer JT’s Blog, or the new title and subtitle, or have some ideas of your own.

I’d also welcome comment on what you’d be interested for me to write about.

Photo details

My photo in the header is a self portrait I took with a Canon G2 in the days when 4 megapixels was state of the art for consumer digital cameras.  The G2 was great for shooting self portraits because of the rear LCD screen which could be swung out and rotated so that I could see myself in the screen.

The photo has been processed in Photoshop to remove the background, and the header was created in Xara Extreme Pro 5.

CSS

Getting the header onto this page is a whole other story which involved a lot of Google searches to find suitable CSS code for Thesis, and then copying it into the appropriate file in the Thesis framework.  It took a great deal of trial and error and failures, and more Google searches for CSS code that works.

A big day for this page

When I got up this morning I was thrilled to find a carton from Amazon on my front porch, with the two WordPress books that I’d ordered on 31 July.

This page is powered by WordPress and it’s so easy to use that anyone can use it as I have done, without any books or formal training.  This being the case, you may well wonder why I ordered these books.  The answer is, that being a retired and single person without a family, I need things in my life that I want to get involved in.  Currently this page  is it.  So I wanted to delve deeply into everything about WordPress, which powers this page.

The Thesis theme

Today I’ve added a new theme to this page, called Thesis, and it’s going to be my normal theme from now on.  But now and again I might throw in another theme just to remind you how flexible WordPress is.

Apart from a new layout, you might notice some new features.  One of them which you might like is that you can write and publish a comment to any of my posts, and then you have 30 minutes to edit your comments and details of your name  and email.  You can in that time, edit your comment to add a request for me to delete your comment and not post it.

Today I signed up with wordpress.com and created an account.  I can now create and publish a blog page on that site.  But my reason for joining was to get a code to enable me to activate some plugins on this page, such as the one above.

Another new WordPress theme

I was thrilled to get a comment today, which you can read, and my reply, in the comments section, or by clicking on comments below yesterday’s post.

I notice that WordPress has automatically begun a new page for my older posts, with a link at the bottom of this page.

I’m up and running now with designing my own WordPress themes in Artisteer, and have posted a new theme today.  I’ve got a totally different looking design ready to post on Saturday, for the weekend.

Digital radio started today in Australia.  The 7PM Report commented on it in their program this evening.  Charlie Pickering advised, with a straight face as I recall, that listeners with digital radios will be able to listen to broadcasts of Parliamentary proceedings and be able to choose between the Senate or Representatives houses.  I don’t expect that will cause a stampede of people rushing out to buy a digital radio.
